Shimeji Cold Dish
Remove root portion of the mushroom, clean thoroughly; cook in boiling water for 30 seconds, strain dry and mix with vegetable oil, ginger shreds, sliced garlic, rice vinegar, chicken powder, salt & sugar. Cook in microwave oven at 500 for 1 minute would come up with a crispy and full aroma dish.
Stir fry chilli/shrimp and shimeji mushroom
Cook the mushroom in boiling water for 30 seconds, strain dry. Chili cut to strip. Stir fry the mushroom, chili and shrimp in high heat with oil, salt and light soy sauce. You can always substitute the chili with green bell peppers or chili.
Stew Spring Chicken with Shimeji Mushroom
Cut chicken in small chunks of 4cm, high heat sauce pan, add spring onion in short length. Ginger, star anise, bay leaf; Stir fry them for a while, add chicken, stir fry until brown. Add oil and stir fry for 1 minute. Add soy sauce, add mushroom, put the lid on, turn to low heat and stew for 40 minutes
